You're essentially describing AirPlay. Sidecar does a lot more- it allows you to extend the display of your Mac onto the iPad. You can also mirror the app from the Mac- for example Illustrator to the iPad and use the Apple Pencil as the stylus and input device. And it does it on a relatively low latency.
